Hi Kim,
Are you staying on the main island in Fiji? I stayed there in a self contained apartment a couple of years ago, and found some surprises in terms of food, which may be helpful for you to know in your planning..
I was extremely surprised about the lack of fresh fruit and veges. Essentially, we could get coconuts easily, and some veges, but there wasnt a lot of fruit around. most of the veges were starchy veges - potato, kumera, carrots etc.
We were staying on the Coral Coast, and we had to drive to Suva to be able to get meat, which was all pre-frozen -no fresh meat to be found anywhere.
Not sure about getting tuna and other seafoods.
But I do remember it being very hard to get fresh food - most ended up being tinned or frozen. So, keep that in mind in your planning. But you will have a great time I'm sure! and I'm sure you'll have some creative solutions.
HL
