| Country Vegetable and Bacon Soup

Ingredients
1 tbs olive oil
1 onion, chopped
9 slices Weight Watchers Bacon, chopped
2 cloves garlic, crushed
2 carrots, chopped
2 sticks celery, chopped
400g canned tomatoes, chopped
1 cup canned red kidney beans, rinsed and drained (buy at
least a 300g can)
4 cups vegetable stock (made with stock cubes)
2 cups cabbage, shredded
2 tbs parsley, chopped
Instructions
1. Heat the olive oil in a large saucepan and add the onion and bacon. Cook over a medium heat until the onion is soft, about 5 minutes. Add the garlic, carrot and celery and cook for a few more minutes.
2. Add the tomato, kidney beans and vegetable stock and bring to the boil. Reduce the heat, cover and simmer over a low heat for 15 minutes. Add the cabbage and simmer for another 10 minutes. Season to taste with salt and pepper, stir parsley through and spoon into warmed bowls to serve. |
