Seems like you're eating VERY little fat and close to no protein.

And how do you know you've lost 'no muscle' ?? Chances are that you're losing muscle and water from what you're saying.
I don't know what veggies, she was eating - but not all veggies count as carbs, they just count as "free" foods - now if she was eating starchy veggies - that would be a carb (i.e. potatoes, peas, etc.)
