So lets say I'm trying to up my calories to 2300ish from 1900....If I find myself on the couch, at 11pm in the evening and discover I've only consumed about 1800 that day, should I leave it alone or should I try and maybe drink a last shake, or maybe another sandwhich before bed to get it up?
Eating more meals per day of the right type is more important than what time of the day you eat them. If you have not eaten within the last two hours (at the hypothetical time of 11 pm) then by all means have another meal of 300-400 calories.
Another tip: Make sure this meal has protein in it. Late at night is when people have a tendency to binge on carbohydrates exclusively. Including protein will moderate the insulin spike.
I'd be interested in the learned responses to this topic as well. I find that if I've eaten too few calories by the end of the day, I'll chomp on some Costco chicken or chocolate whey protein etc.

I'd rephrase this to say, "Hitting your caloric and macronutrient totals each day is more important than meal-timing."

I can't argue with this.
Unless you train with weights late in the evening.
