This does sound yummy.. I do have the time to make that.. I wasn't digging the hard boiled eggs and chicken for breakfast idea. Thanks for the suggestion!! Do you have any other quick breakfast ideas??

I have ham sandwiches for breakfast.

Whole wheat Toast
Ham
And mustard (which mine has no cals, and I love it)
And a glass of milk

Then I usually eat a banana with it too (not together) because then I'll have my Dairy,Meat,Grains, and Fruit.


But that's just me...sandwiches are one of the only things that keep me full until I come home.


I'd reccomend waking up 15 minutes earlier if you can't find the time to eat breakfast.

if you like eggs...

This is about 25 minutes once but gives you about 3 -4 days...

Crack a bunch of eggs in a bowl -or use egg beaters
Add in some chopped vegetables (your choice)
Add in some chopped chicken, ham,turkey bacon if you choose
Add in some cheese if you choose (reduced fat OK - fat free melts like rubber - you do want this to taste good.

Spray some muffin tins with non stick spray

Pour your egg mixture into the muffin tins and bake for about 15 - 20 minutes at 350 until the eggs are set.

Let cool

Put egg muffins into wax paper, plastic wrap, sandwich bag and put in fridge or freezer.

In the morning
take one out and microwave for about 20 - 30 seconds or put i the oven for about 5 minutes til warm.
Serve sliced on a whole wheat english muffin..

I'm a guy who has been a die hard meat eater for as long as I can remember. I actually love bread, pasta, vegies...well I just love nearly every kind of food but what I'm trying to say here is that I never would be one that turned down meat for any meal.

However with this last diet that I have actually applied some science too I've come to really love going with a carb based breakfast over a protean based one. Not only does it just feel better to me starting out my day thus but from what I can tell the science backs me up on why I feel better with such a setup.

I've been doing this the hard way! I didn't think of the muffin tins, just been cooking them in a pan.

I actually like to use Melissa's soyrizo (I'm not a huge soy fan, but it's got a nice flavor and keeps better than hamburger meat) and reduced fat Mexican cheese.

One thing I do like is to spread avocado on the english muffin - helps get in some more of the good fatty acids, and goes will with the spices in the eggs.

Thanks for your suggestions Maleficent! I'll definitely give both of those things a try this week!! I have extra time on Sundays so I can attempt to make the eggs muffins this then and it will last the first half of the week.. Much appreciated!

the mufffin tin idea - truth be told -i stole from teh south beach diet cookbook and just did a bunch of improvising on ingredients.. the muffin tin is helpful for portion sizes and especially freezing ahead
