Ok in order to actually lose weight you need to burn more calories than you're taking in, correct? Well how do you know how many calories you're actually burning?

It could be water weight, our weight fluctuates from day to day, i suggest picking one day as your weight in(i do it on mondays)and weight yourself at the same time everyday bc what you eat and drink adds weight too.
as for cals your burning it depends on what your metabolic rate is there are calculators out there they give you a guide line. i use http://www.fitday.com/ to calculate my food and activities they have charts and stuff its pretty cool. they lack some exercise in the activity category but still it gives you a guide line. http://www.bodybuilding.com/fun/calculators.htm
