Before you start 'shooting' for a specific caloric intake, I'd figure out where you currently are.... as stated above.

And invest in a food scale and measuring cups. Winging it works well for some. Others not so much.
This looks like a case of it not working.
And remember, don't alter your eating habits simply b/c you are going to track your intake now. Seems like commonsense, but most do. If you do, then the numbers you come to from your tracking will not help solve the problem at all.
