I've FINALLY convinced my husband to try ground chicken instead of ground beef in a couple of recipes....but now I can't find any!! Where do all of you get ground chicken (if you eat it)? Is it something hard to find? I would just use ground turkey, but he's tried that before and just hates the texture....
I didn't know they sold ground turkey and ground turkey breast. I thought it was all breast. Until my mother invited me over for turkey burgers and I hated them. I asked to see the meat wrapper and it was in fact ground turkey. It's much darker since they mix all the meat, white and dark and I've never been a fan of dark meat.
I've been told the same is true with chicken...they sell ground chicken, that contains a mixture of dark and light meat, with fat, skin, etc. I can see how that would be mushy....
You have to really read labels -unless it says lean or 97percent fat free -the ground turkey will be made with dark meat and the skin - tastes better but defeats the purpose of going the ground turkey route.
You can ask the butcher in the grocery store to grind up chicken for you... when the breasts are on sale - hand over a few for grinding...
