When cooking for myself and my son I find that we are eating a lot of pasta dishes. This is a part of our main diet. What else could I substitute for pasta.
I think one of the suggestions is to cook them 'al dente' which means that they have still some 'bite' to them. I just heard a report on the news the other day, where they mentioned that if you cook them 'al dente', that they turn into a slow carbohydrate - not sure if my terminology is correct - and therefore don't raise your bloodsugar level too fast and no insulin overproduction will occur.
Is there a way to overcook whole wheat or multigrain pasta. I was under the assumption that they stay 'al dente' if you cook them according to the instructions. Well, I guess if you cook them much longer you'd manage to get them soft as well, but who likes the pasta like that.......
Brown rice is a good substitute. Or as others have said increase your side dishes.
