Pizza, burger and fries?

Thought I would post this here for you guys, give you a little something different or the same maybe but healthy

The No Cheese Pizza

I have a Sunday supper for some of my clients and every week they get something new so I have to get creative and keep trying new things out. For the past weeks though they just want stop begging for the pizza so I thought I would post it up here for you guys.

*this can work for any goal, BUT if cutting limit your processed bread intake, I would recommend this as more of a weekend thing more then everyday*

Items needed (little involved but worth it)
Note that you can substitute/add veggies for other veggies, just make sure low calorie or same calories as the ones you are trading out to keep the stats close.

BOBOLI 100% Whole Wheat crust (it must be this brand, most stores have it, in fact I have yet to not find it, but its always in a side section or hanging somewhere random. So ask a store clerk to help you find it if having trouble.)
4 ounces of 96% lean hamburger (rolled into balls and pre-cooked)
12 slices of turkey pepperoni
Half of small onion in long slices
1 cup of sliced mushrooms

Pizza Sauce
This is very important to the taste, make it as written and then if needed add for your desired taste. This is a restaurant style sauce though and what gives it that eating out flavor.

1 can of Hunt's Tomato Puree-(10 3/4 ounce)
1/4 cup water
1 teaspoon splenda ( can use real sugar if desire taste wise just add it caloric wise)
1 teaspoon olive oil
1/4 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon oregano
1/8 teaspoon basil
1/8 teaspoon thyme
1/8 teaspoon garlic powder

In small pot mix items together and let it come to a light simmer, stir and set aside. Sauce should make 3 pizzas so save what you don't need for later.

Putting together the pizza.
-Pre-Heat the oven to 425F
-With a large spoon spread pizza sauce on the inside of the pizza allowing some room on the edges. Remember that sauce makes three servings so be generous but don't over do it.
-Start adding in a circular form the onion, then mushrooms, then pepperoni, then hamburger.
-Slide in on middle rack and bake for 10-12 mins
-right before you take it out turn on broil and let the top go for NO MORE THAN 1 min. It can burn on you in an instant if not careful, if nervous just ignore this step. It just get the burger and pepperoni and nice finish.

Cut and serve with a side of Pepperchinis.

Here is the best part, the stats.

Each slice
Calories-128
Fat-2.5
Protein-8
Carbs 12.25

Compared to Papa John's Pizza
Cheese 1 slice
Calories-270
Fat-9
Protein-12
Carbs-37

If you want to add some more protein you can up the ground beef amount of throw on some cheese if low fat or not worried about the fat content.


BURGER AND FRIES!

Comparison Stats:

Mcdonlads- 3 ounce Hamburger plain (bun only no ketchup, no pickle)
Medium Fries Plain

680 calories (6 ounces of food)
29 fat
80 carbs
18 pro

MY Burger and Fries-3 ounce Hamburger with bun,onions,mushroom, tbsp ketchup, and 1 large dill pickle
Medium French Fries

385 calories (6.3 ounces of food)
10 fat
48 carbs
27 protein

Recipe: This isn't a short meal and this is in no way a low sodium meal however you can make it so if desire. It is however an easy meal. I recommend start cooking the burger when the fries are about 10 mins from being done so that both are hot and ready to go at around the same time.

Hamburger:

Ingredients:

3 ounce 96% lean ground beef
1 tbsp of whorchester sauce
(here is where personal choices come in, you can season it anyway you want,
your burger. I personally like a little kick to mine)
1/4 tsp of pepper
1/4 tsp of onion powder
1/8 tsp of chili powder
dash of salt

-Blend all the spices together and then sprinkle on ground beef.
-Mix the beef and the spices (mush) together.
-Flatten out into patty.

In pan:

5-10 slices of onion
5-10 slices of mushrooms
splash of whorchester sauce
and 1/4th cup of water

-Turn on high and sear each side until slight crust is formed then turn heat down to simmer and look cook till desired done is achieved.

-Heat up a high fiber or light bun in the toaster or oven (80 calories for bun)
-Layer onions, ketchup and mushrooms on bun. (note you don't have to eat the mushrooms and onion if you don't want to) DONE!


French Fries:

Ingredients: (note need a flat pizza/baking pan)

1 medium white potato
1 tsp of oil
1/2 tbsp light butter ( I use smart balance light). You want even use all of it either.
Season salt
salt
pepper

-Boil a medium pot of water
-Clean and peel potato
-Cut potato into wedges (or what ever you desire, these can be any kind of fry shape)
If your want crispy chip like fries make them thinner. If you want more restaurant wedge or thick style then keep them a little thicker.
-Toss cut potato into pot and let boil for3-5 mins (or until you can just about cut through one with a fork) DON'T over boil them!
-Strain and dry on paper towel

-(With a sauce brush) Brush the baking sheet with some of the melt butter and the tsp of oil.
-Place fries evenly on the pan
-on top of the fries place some more of the butter until they shimmer.

Cook on lower rack at 450F

When tops start to slightly brown take season salt, salt and pepper and go to town. You can make them as salty or less salty as desired.
I personally hook my up pretty good though, but you should still taste the potato.
Cook for about 5 more mins and then done! Fries in picture are a medium thickness wedge style fry with a slight crisp to the outside but nice give on the inside.

That is ladies and gents the healthy BUT tasty Burger and fries.

Just burger stats-
228 cal
25.2 pro
5.5 fat
21 carbs


Just fry stats-
157 cal.
2.3 pro
4.6 fat
27 carbs

I hope the pizza tastes better than that vile stuff that papa johns serves... Boboli crusts I don't like -- it's too thick and the texture is off- have you tried it with home made whole wheat pizza dough? or is there something special in the boboli stuff that m akes it healthy?

I think I would go with spinach on the pizza as well, and for those who get heartburn with tomato sauce, a 1/4 teaspoon of ground coffee does the trick (Italian grandma secret).

I've had that in my cooking repitoire for years - I tend to leave the sugar out (because I hate a sweet tomato sauce - and will use balsamic vinegar instead to heighten the flavor) but the coffee adds another level of flavor - it's not a lot but it does make a difference.. I had no idea abouot the heartburn thing.. cool trick

That is very interesting. Tomato sauce and coffee both give me heartburn. I wonder if this will work for me.

I recently started eating New York Pizza's down here which I enjoy a LOT more than Dominos or Papa John's. The Pizza's are not as thick bread-wise and the cheese is a lot skinnier.

I always pat down 1-2 times as well and feel that 1-2 pieces are not bad.
