1 piece of white fish, your choice _ i used SkateWing, but tilapia or snapper would work perfectly. (my piece was about 12 ounces which will make dinner and lunch)
juice of 2 limes
1 tsp cumin
1 tsp ground coriander

(marinate fish in the above for about 30 minutes)

1 package fresh express cole slaw mix (or chop up your own cabbage, I'm lazy at heart)
1 handful shredded carrots
1 handful chopped fresh cilantro
1 handful sliced snow peas (not necessary I wanted more crunch)
3/4s cup pico de gallo sauce , or any fresh salsa
1/2 cup fat free sour cream mixed with 1 tsp lime juice and 1 tsp cumin.

Broil or bake fish abouot 20 minutes ish til it's cooked thru
Remove from oven and using a fork or a spoon, break it up into chunks.

Ina large bowl, dump in the cole slaw mix, carrots, cilantro and snow peas (or whatever veg you're using) Drop on 1/2 cup of pico de gallo sauce and 1/2 the sour cream mixture. And toss til coated.

I made this as a salad and added the fish and tossed with the remaining sour cream mixture and pico de gallo.. if you're using tortillas or taco shells add the cabbage mixture and spoon on some fish and the pico de gallo and sour cream.
