There's a pumpkin curry soup
recipe that's posted in this forum that's outstanding - just use as much or as little curry as your tastes allow.
Butternut squash soup is easy.
it's chicken broth, butternut squash (frozen is fine) and blend.
Cream of broccoli soup...
make a roux of flour and olive oil... and stir in pot til it gets lightly browned
add skim milk and chicken broth
add package frozen chopped broccoli (or spinach)
stir til broccoli is cooked
blend
add cheddar cheese if desired
Potato/Leek soup is also quite tasty
