It tastes like squash. No matter how long I cook it, it's still crunchy and totally unlike spaghetti in texture. And to me, the taste doesn't go well with spaghetti sauce.
I like a butternut or acorn squash, baked and then mashed and made into little pancakes with curry powder and an egg.

I don't think I've ever had crunchy squash. How do you cook it?
I think it might go better with a white wine sauce than a meaty spaghetti sauce, but I've also had a squash casserole with a tomato sauce in it that was pretty decent. I've been reading a lot about this too. Next time I go to the store I try to remember to pick one up to try it. In the end though, I don't think you'll like it if you don't like veggies.
How would it work with a person who doesn't like veggies?
Don't be a veggist - you can't say you don't like veggies until you've tried all veggies... You aren't 5 - try it - keep an open mind and you might actually like it... try other vegetables while you're at it - you might actually like those too - a person's tastes change as they age... things you didn't like 10 years ago- you might actually like now.
Spaghetti squash - and there's a few threads on different preparation methods on this forum - doesn't really taste like spaghetti, looks like it -but it tastes good... and doesn't have a mushy texture like other squashes do...
you can put a spaghetti sauce on it... or just do a baked variety with a bit of cheese and garlic... but do experiment with it..
I just made spaghetti squash tonight and it came out great. I took one squash, cut it length wise, and scooped out the seeds. A half pat of butter on each side and some pepper and on a cookie sheet face up. In a 350 deg oven for one hour. Took it out and let it cool for a few minutes till I could handle it, then scraped it out with a fork. I loved it, the kids loved it, and it cooked right next to the chicken, so it didn't take any more time.
I had it once, it wasn't too bad. We roasted it, shredded it with a fork, then combined it with Parmesan cheese, peppers, onions and garlic... I think...
