Rep Power: 217 | | | An Apple A Day (a collection of Apple Recipes) it's that wonderful time of year... where apples are plentiful in the stores.. thoughnot quite cheap... they do make the house smell fabulous when they're cooking..
Apple Dried Cherry Chutney
This stuff is really good on grilled/broiled/baked/roasted turkey/chicken/pork tenderloin, on in place of mayo on turkey sandwiches
3 tbs vegetable oil
2 cups chopped red onion
1 tbs fresh chopped gingerroot
1/4 tsp crushed red pepper (more or less according to taste)
1/2 cup dried cherries(dried cranberries or blueberries also work)
1 tbs dark brown sugar
1 cup water
2 Granny Smith apple, cored and finely chopped (no need to peel)
1 tsp cornstarch dissolved in 1 tablespoon water
1 tsp white balsamic vinegar
In large skillet, heat oil over medium heat. Add red onion, gingerroot, and hot pepper flakes; saute, stirring, 5 minutes. Add dried cherries, brown sugar, and salt. Stir in 1 cup water, cover, and cook over medium heat 5 minutes.
Add apple to onion mixture, cover and cook 6 to 8 minutes or until apple is just tender. Stir cornstarch mixture into apple-onion mixture and cook over high heat, stirring, until mixture is thickened and appears glazed-about 1 minute. Remove from heat, stir in vinegar, and cool before serving or storing. Chutney can be refrigerated for 1 week or frozen for 1 month. |

4 granny smith apples (or other firm baking apples)
3 pears (asian, bosc, whatever you like)
1/4 cup brown sugar sugar
juice and zest of 1 lemon
4 ounces water
2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tsp vanilla extract
1) Peel, core and chop apples and pears (note- I am lazy so I tend to not peel the apples and pears, but it's your choice). Sprinkle sugar over fruit. Combine lemon juice and water. Pour over fruit; stir gently.
2) Transfer fruit to sauce pot. Bring to boiling; cover and reduce heat to low. Cook 10 minutes or just until fruit are soft, not mushy.
3) Stir cinnamon, nutmeg and vanilla.
4) Puree 1/3 of fruit and cooking liquid in food processor or blender, until almost smooth. Return to sauce pot.(for really chunky sauce -elminitate this step - for less chunky sauce -use an immersion blender and whir it up a few times)
5) Cool or serve warm over ice cream or vanilla yogurt... or over oatmeal... or with pork chops or grilled meats |

I'll make this because it's so easy and better for you then store bought.
Three apples peeled, cored, and sliced fine.
But apple slices in a sauce pan with 1/2 cup of water and 1 tsp of cinnamon.
Cover and cook on low heat for 20 min stirring occasionally.
Serve warm. |

Rep Power: 42 | | I too am lazy when it comes to peeling apples. That's why I have an apple peeler corer slicer. Not this brand, but one similar.
I don't have this brand, but it's basically the same thing. It takes about 10-20 seconds to peel core and slice an apple. You can find them relatively cheap on ebay. |

Rep Power: 42 | | | It can go in the dishwasher, but I usually clean mine by hand and it's very simple. Don't have to take it apart or anything. It's also an easy thing for the kids to help out with. I'm not trusting them with a paring knife just yet. |

1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 teaspoon salt
1 cup apple sauce
1/2 cup white sugar
1 cup brown sugar
3 eggs
1 tsp vanilla
3/4 cup buttermilk
3 cups chopped apples (peeled or not, your choice - baking apples not totally necessary
zest of one orange
1 tbs cinnamon
Combine dry ingredients. Set aside.
Combine wet ingredients, set aside.
Mix wet ingredients into dry ingredients and stir.
Fold in apples and orange zest.
Pour into two 8 1/2 x 4 1/2 x 2 5/8 - inch greased and floured loaf pans.
Bake at 350F for about 50 minutes or until wooden pick inserted near center comes out clean.
Cool in pan 10 minutes
Remove from pan and cool completely on wire rack.
(because o f the whole wheat flour, this is best the next day -wrap it and serve a l ittle warm the next day...
Also makes for good muffins |

1 butter, melted
1 tbs packed brown sugar
1/4 tsp ground cinnamon
2 Golden Delicious apples, cored and sliced
1 cups all purpose flour
1 cup whole wheat flour
(or two cups ap flour)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup apple sauce
1/2 cup sugar
2 eggs
1 carton (8 oz.) plain lowfat yogurt
Streusel Filling
Combine 1/2 cup sugar
2 tbs butter
2 tbs flour
2 tsp ground cinnamon
1/2 cup chopped walnuts or pecans
Combine melted butter with brown sugar and cinnamon in 9 X 9 X 2-inch square baking pan. Smooth mixture evenly over bottom.
Arrange apple slices over brown sugar mixture.
Combine flour, baking powder, soda and salt.
Combine apple sauce and sugar.
Add eggs one at a time; beat well after each addition.
Add dry ingredients
Add yogurt.
Spread half of batter over apple slices.
Sprinkle Streusel Filling over batter in pan.
Spread remaining batter over filling.
Bake at 350 degrees F. 30-35 minutes or until cake tests done\Invert onto serving plate.
Serve warm
Especially nice with ice cream - or with powdered sugar and cinnamon icing.... |

1/4 cup brown sugar
2 tbs flour
1 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract (or almond extract)
1/4 cup water
1 tbs butter, softened
Topping:
1/2 cup whole wheat flour, sifted
1/3 cup brown sugar
1 tsp baking powder
1 tbs butter, softened
1 egg, slightly beaten
In a medium bowl, combine apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, 1/4 teaspoon salt, vanilla and water. Put into a square pan that's been sprayed with cooking spray Dot apples with 1 tablespoon butter.
Combine all topping ingredients. Drop batter in 9 portions, over the apples, spacing evenly. Batter will spread during baking. Bake 35 to 40 minutes at 375° or until apples are tender and crust is golden brown.
(the original recipe called for white sugar and more than double the amounts -I made it with brown sugar - not the splenda crap because there's little calorie difference and I can tell a huge difference in taste) becuase brown sugar is a lot sweeter.
This is also good with peaches, nectarines, pears or really any of your favorite fruit -berries though -no so much.. |
