Bavarian Potato-Cucumber Salad


Fresh and unique taste for a potato salad!2 cups thinly sliced peeled seedless cucumber1 teaspoon kosher salt1 pound small Yukon gold potatoes, quartered1 pound red potatoes, quartered3 tablespoons less-sodium beef broth2 tablespoons dry white wine3 tablespoons Champagne vinegar or white wine vinegar2 tablespoons extra-virgin olive oil3/4 teaspoon freshly ground black pepper1/2 teaspoon Dijon mustardDash of ground nutmeg1/4 cup minced green onions2 tablespoons minced fresh flat-leaf parsley2 tablespoons minced fresh chives
