Couple of pasta sauces

Hi all thought I'd add my veggie pasta sauce recipies on here. The first is a really healthy one because it's basically all veg!

Red pepper pasta sauce (serves 4)

You'll need

3 red peppers
1 sweet red pepper
1 green pepper
1 red onion (or normal onion but I prefer red)
1 veg stock cube
1 can tinned tomatoes
1 clove garlic
1 red or green chillie (optional)
1 carton of pasata
5 mushrooms
1 table spoon olive oil
Mixed herbs
Italian seasoning (herbs again)


First of all heat the oil in a large pan and dice the veg.
Fry the veg until soft then add crushed garlic
Add tinned tomatoes (chopped finely)
Add mixed herbs, stock cube and pasata
Leave to simmer for 1 hour
Add Itlaian seasoning

See what I mean, crammed full of goodness, suitable for vegetarians, tastes good and pretty easy to make! I might make this tomorrow actually then I can post photos to show you what it looks like!

Here is another one I like though

Vegetarian Bolognese (serves 5)

1 red or white onion
1 red/green chille (optional)
1 packet of "quorn" mince (get it in the freezer section - obviously if you want a meat version just use lean mince)
5 mushrooms
1 veg stock cube
1 can tinned tomatoes
1 clove garlic
2 cartons of pasata
5 mushrooms
1 table spoon olive oil
Mixed herbs
Italian seasoning (herbs again)


First of all dice the onion, chillie and mushrooms and fry in a large pan with olive oil
Add crushed garlic and mixed herbs
Add packet of quorn mince
Stir until mince has fully broken up and absorbed onion juice/oil
Add finely chopped tinned tomatoes and stir in
Add pasata and stock cube.
Leave to simmer for 20mins, add water if it begins to look too dry
