Spaghetti Squash Suprise...

I love alliteration...

1 smallish spaghetti squash (2 -3 lbs) cooked by your preferred method. (yields about 19 ounces of squash pulp (8 calories an ounce, so this is about 160 calories)
1 cup fat free ricotta (normally I hate fat free, but it was good in this case) (180 calories)
2 cloves garlic, minced
2 tomatoes, diced (50 calories)
1/2 cup basil, torn
1 ounce parmesan cheese, grated (divided into 1/2 ounce and 1/2 ounce)
(I didn't but you could also use 1/2 cup of low fat mozarella too) (50 calories)

the suprise is, this huge casserole thing, contains less thabn 450 calories in the whole thing - that can easily serve 4 or more...)

Cooking a spaghetti Squash
Cut squash in half and remove seeds
Poke the skin with a fork a bunch of times and lay face down on a baking sheet.
Bake in 375 degree oven ofr about an hour or til skin is softish.
Remove squash from oven and allow to cool a bit

Alternate method - cut it in half, remove the seeds, cover with cling wrap, microwave about 15 - 20 minutes)


Turn squash over and using a fork, scrape the innards so that the squash looks like spaghetti (it does this naturally, don't be scared.)

On with the recipe

Put squash in a bowl
combine all ingredients except the last half ounce of parmesan cheese.
Mix all ingredients
Salt and Pepper to taste (keep inmind that Spaghetti squash is naturally high in sodium, and parmesan cheese adds a bit of salt)
Put ingredients into baking dish and sprinkle remaining parmesan cheese (or mozarella cheese) on top

Bake at 350 til cheese is lightly browned and everythig is warmed thru...

I tried spaghetti squash in place of pasta for spaghetti. It was sooooo good. I was amazed. That stuff is awesome.

Mal, I made this recipe last night (first time trying spaghetti squash) and I must say it is quite tasty. One thing that I changed was that I only put 1/4 cup of basil instead of half. That spice is very dominant at 1/4 cup, I can't imagine the taste at 1/2.

Overall great dish though.

I love fresh basil and would have it all by itself all day long if i could

gotta go with what you enjoy though -so good job for trying smething new

OK Mal, you have convinced me, I am going to have to try this. Here is my question. I hate to look so stupid in public, but I have never seen a spagetti squash. Do they sell them at the grocery store? Where do I look?

you'll find them in the produce section with the butternut squash and the acorn squash and the sugar pumpkins..

It's oval shaped and yellow in color...

Instead of putting it in a baking dish, you can divide the mix between the two shells, sprinkle the remaining cheese on top and put the works under the broiler until golden melty and delicious. Just an idea.

I loved this recipe.. I honestly never cook and it was easy, I have never eaten squash not fried, so I was kind of worried. I LOVED it though. I couldn't even eat half of this tonight, so much food for so little calories. Thanks!

I tried a similar recipe for spaghetti squash surprise a few years ago. For me, the biggest surprise was that I found out that I didn't like spaghetti squash. Also found out soon after that I didn't like eggplant either.

This looks so good! I could addapt it to my plan really easily aswell. I've never seen a spaghetti squash before though, im going to have to try it.
