Carrots!

I dislike them raw!

Any of you guys got any simple fast recipes for carrots? I'm trying to get a lot of them in my diet because it's great for you, but I just can't stomach eating raw carrots, it sorta makes me gag.

Any help appreciated!

roasted carrots - like imentioned in your other thread are tasty...

you can make a carrot, curry and ginger soup that's incredibly good - it's chicken or vegetable stock with a bunch of carrots, and some fresh ginger simmered til the carrots get soft - then blend it -and add in some fragrant spices like curry powder, coriander. cumin... garlic - whatever makes you happy/

Carrots are good for you because of the beta carotene -= but you really want to get a rainbow of colors in your veggies -

If you dont like eating chunks of carrots, then you can grate them into your food. When i make meat patties or balls, or vegetable patties i always grate carrots and zucchini into them.

that's a great idea - not only are you getting fiber and extra nutrients in there but it also helps to keep the meatballs moist...

Thanks Maleficent, It really does leave the meat very moist. I stumbled across doing that when i was trying to 'sneak' more veggies into food for a friend of mine who was anti vegetable.lol...and i kept on doing it.

Good idea guys, thanks a ton.

I already use lots of carrots in my soups and its great. I never really thought about grating carrots, will definately give that a try.

Carrot slices sauteed in olive oil are good, I often put them in black bean soup or cajun dishes, don't really eat them by themselves unless they're raw. Go to foodnetwork.com and do a search on black bean soup and look at the one with monte cristo sandwiches by rachel ray. I use kind of most of that recipe but put carrot slices in there too, it's good.

Lately I've been sauteeing them with a little olive oil and garlic, comes out really good.

Serves 4

INGREDIENTS:

4 tbsp. butter

1 tbsp. soft brown sugar

2 tsp. dried caraway seeds

1 tsp. salt

1 tsp. black pepper

1 lb. steamed baby carrots

METHOD:

Melt butter in a pan. Add sugar, caraway seeds, salt and black pepper. Simmer gently, stirring constantly for 3 minutes.
