What do you eat?

I'm trying to get some new ideas for snacks and meals. I'm to the point where I'm starting to get bored with my every day menu. So.... What do you eat? What's your favorite healthy meal and snack?

have you tried eating cottage cheese? it's good, as a snack.. or breakfast which i try to eat most of my days in a week , good as a dip also!

i also like cheerios, some people dislike cereal because of sugar, but cheerio has 1g of sugar, i usually eat 1 cup

well for breakfast
i usually eat cottage cheese with 1 cup of cereal, recently it been froot loops but i am changing it to cheerio because i am running out! haha its really good try it. i mix it up so you get a bite of both every spoon

for lunch i usually eat leftover from dinner, usually from my moms cooking and since i am in an traditional asian family, we eat rice with everything, i try to eat 3/4 to 1cup of white rice with whatever dish is left over

dinner, my mom usually cook something, its always different, same as lunch, 3/4 to 1 cup of white rice and the dish

Its not exactly healthy, but half a whole-grain english muffin and a half serving of nutella. Calories aren't so bad and its delicious.

Meeee Tooooo! My mother is Korean.
I don't live with my parents anymore, but I go over there quite often for dinner and we ALWAYS eat rice. I try to not eat too much of it, but the rest of the meal is so healthy I figure it all balances out.

MmMmmmm. I like to freeze peeled bananas and drizzle low sugar chocolate syryp on them!! YUM!

Hummus is good too - using it as a dip for veggies makes for a healthy snack.

I also like to make avocado yogurt - mash an avocado and mix with some Greek yogurt, plus some onion powder, lime juice, salt & maybe other spices. Kind of like guacamole, but the Greek yogurt gives it a little more protein and you can eat it with a spoon.

Oatmeal. It's getting cold in these parts, so oatmeal is good

Do you eat meat? This salad makes a pretty delicious meal

Thinly sliced beef
Cos Lettuce
1 Red Chilli, de-seeded and sliced
Corriander, chopped
1 Lime
2 Spring Onions, chopped
1 Tbs Fish Sauce
2 Cloves garlic, chopped
Sesame Seeds
Mushrooms, sliced

In a little oil fry the chilli, garlic and mushrooms till soft. Add beef and cook (but not too much, it's most awesome when it's a little pink...but of course that's down to personal taste). Mix together juice of the lime, fish sauce, corriander and spring onions and poor over beef when it's almost at the point you're happy with. Keep frying a little bit longer just to let all of the flavours mix and the beef to be just right. Then serve on a bed of Cos Lettuce with sesame seeds sprinkled on top.

Delish!

That sounds pretty good! I've been doing a 'taco salad' with thin cut beef, refried black beans, avocado dip and the usual suspects that's gotten rave reviews at home.

What's the cos lettuce?

I'm a big fan of steelcut oats (also called pinhead oats) - it is my favourite breakfast these days.

I like to add hemp seeds to it, for extra protein and healthy fats. I sweeten it with agave nectar, because I like the milder flavour compared to maple syrup.

Yes, sort of. It is whole oats that are coarsely chopped up, instead of pressed or rolled. Higher in nutrients than other kinds of oatmeal. Take a while to cook, though, which is why I cook mine in the rice cooker.

Hey Mylee, I just spent the last few minutes here trying to find this bean dip recipe my mom used to make for me. I am unable to locate it right now. It's actually probably really fattening, but that's easily fixed.

Basically you can do it with any ingredients:

You take a large pan, than you add everything in layers. Layer's are the key.
2-3 layers of everything
-refried beans , light sour cream, chopped onions, chopped tomatoes, black chopped/sliced olives, corn, salsa, Shredded Cheese (only a top layer), whatever else you'd like and than you chill it.

Now you have a great dip for your taco's, or whichever. It usually ended up being a meal.

I also really enjoy this meal: I make it as often as I can for a treat:

I fry buffalo (whichever ground meat) I don't cook it very long, I like it moist almost pinkish. I don't use oil here. Sometimes I add a bit of Sweet Onion. Once it's near done, I add it into the noodles that are still frying.

Boil some Rice Vercimecelli (asian noodles), than fry them in a couple tsp's of olive oil.

Along with the meat and noodles, I than toss in some broccoli, sometimes corn, mushrooms, red pepper, celery, whichever is preferred.

Than place in a large bowl.

The next step I've only ever done once, I crumpled up some low sodium taco chips, added some shredded cheese, and than some salsa.

Sometimes instead of salad dressing if I have Salsa, I use that on my salads.

Tropicana Extra Pulp Orange Juice, poured on a little bit of extra creamy vanilla ice cream, and give it a stir. Okay okay Okay, I know such a bad snack for you. It's like a magical orange creamsicle.

I've enjoyed reading the ideas in the thread. Here are a couple of my quick snack routines.

I love ice cream, which I'm not eating these days--at least not often. For me, I've found that frozen bananas make a great healthy replacement--cold, sweet, creamy. I know someone mentioned serving them with a bit of chocolate sauce, but I like just the frozen banana with nothing on it.

For a quick savory snack, I sometimes make pizzas out of whole wheat pitas or English muffins--veggies, olives, tomato sauce and some cheese I always grate the cheese, it makes less cheese fill out a dish more. I also like making quick tostados--salsa and grated cheese on a small corn tortilla. I like these options as I can chop up and use a wide range of veggies on the mini pizzas / tostados, and also they are very quick to make. My wife and I try to alternate making batches of salsa and tomato sauce to keep in the house, but we also have an emergency stash of sauce and salsa in jars.

I also like making whole wheat and bran muffins (including savory muffins with odd herbs and veggies I find in the fridge--I made some whole wheat tomato-dill muffins the other day). Muffins are a nice snack to keep in the house--also, they can be frozen and then popped in the microwave whenever you want to eat them. I just use a standard muffin recipe, and throw in whatever I feel like. And the nice thing about homemade muffins is they actually are a serving--not the 4 1/2 serving behemoth-muffins one gets at Starbucks.
