When I was 19, I was a
vegan but after 2 years I had to abandon the
diet because I was doing a lot of travelling.
But I was a
vegan for 2 years with no problems except for the first month when I experienced not being quite myself. I think my gut bacteria was doing a change over.
What I used to eat :
large haricot beans pressure cooked mixed with ratatouille and black pepper and rice.
chestnuts pressure cooked with sweetened soya milk delicious.
marmite sandwiches
lentil and crushed walnut or peanut sandwiches
lentil and barley soup
rice and baked bins with fried mushrooms and parsnips.
I hear that there is a meat that is made from fungus or mushroom. I forget the name now but is available from supermarkets. If you try it please tell what you think of the texture.
If you google
vegan society you should be able to gather more ideas. The important tip I give is that the
vegan diet makes excellent sense both economically and for space exploration if you think about it.
During those 2 years, I worked 8 hours a day on a farm doing lots of physical labour and it did keep me going in all weathers.
