Ingredients
6 chicken thigh cutlets, skin removed
cooking oil spray
1 onion, cut into thin wedges
3 garlic cloves, crushed
100ml dry white wine
400g can diced tomatoes
1 tbs red wine vinegar
1 tbs capers, rinsed
50g prosciutto
½ cup chopped fresh flat-leaf parsley
60g reduced-fat fetta
Instructions
1. Preheat oven to 180°C. Cut each of the chicken thigh cutlets in half with a sharp knife or kitchen scissors. Heat a large non-stick frying pan, coat the chicken with cooking oil spray and cook over medium heat until golden. Place in a casserole dish.
2. Coat the onion with cooking oil spray and cook over a low heat until soft. Add the garlic and wine and bring to the boil, then add the tomatoes, vinegar and capers and heat through. Pour over the chicken, cover and cook in the oven for 50 minutes or until the chicken is cooked and tender.
3. In the non-stick frying pan, cook the prosciutto until golden and crisp. Remove casserole from the oven and stir parsley through. Season to taste with salt and black pepper and crumble the prosciutto and fetta over the top to serve.

Ingredients
2 x 95g cans Weight Watchers Tuna in Springwater, drained, flaked
¼ cup (35g) semi-dried tomatoes (not in oil), chopped
¼ cup (35g) crumbled low-fat feta cheese
3 (400g) medium desiree potatoes, peeled cooked, mashed
2 tbs (15g) parmesan cheese
¼ cup (45g) pitted drained kalamata olives, finely chopped
1 tbs chopped fresh dill
2 eggs, lightly beaten
½ cup (25g) dried (packaged) breadcrumbs
cooking oil spray
½ cup(130g) Weight Watchers Extra Light Sour Cream
1 tbs (25g) sweet chilli sauce, to serve
mixed lettuce leaves, to serve
Instructions
1. In a large bowl, combine the tuna, semi dried tomatoes, fetta, potatoes, parmesan cheese, olives, dill and egg. Using a ¼ of a cup measure and wet hands form 8 round patties. Coat lightly in breadcrumbs and spray with oil spray.
2. Heat a non stick frying pan over a medium heat. Spray lightly with oil spray and cook patties in batches for 3 – 4 minutes on each side or until golden.
3. Combine the sour cream and sweet chilli sauce in a small bowl. Serve the tuna cakes with a dollop of sour cream mixture and a mixed leaf salad.
Okay so Monday I had my first Weight Watchers meeting, I am at that excited and pumped up stage

No, I am not doing this for him, I am doing it for myself, and I think that it will improve our relationship, because my self esteem will not be as low.
I am a very active person, work out around 5 to 6 times a week, I really have become addicted but...eating is my downfall. I don't want to be one of those depressed people who eat the whole time my husband is gone, so I needed to take this step now in my life.
Really I am not fat looking, I have muscular legs, my tummy, well thats another story.
I am a new member to this board, and I am excited to share and read different tips and weight loss strategies.
